I'm looking to replace my brakes on my 2002 R1150GS.

Other then the price, what is the difference between Sintered metal pads and Organic Pads..?

What type of brake pad would you recommend..?

Mike, a lot of guys run sintered on the front for a harder bite, and organics on the rear for a softer bite. That soft rear bite makes it easier to modulate the rears while the front is getting max bite.
In addition, it allows the harder working fronts to last a little longer. The rear organics don't work as hard so they can last too.
The sintereds typically wear rotors a little faster. It's all a trade off.
To complicate it further, different brands have different feel, life and price.
EBC is a great place to start. They are one of the "gold standards" as well, but there are several top notch brands. They are reasonably priced.
Take a look at the EBC website, I'm sure they have useful info, as will they all.
Oh, you don't want to use sintereds on the chrome plated rotors on your chopper...

I'm wondering why you are not going to use stock BMW pads?
